Questions on the UG Seas, if I were to empty my waterfall into them would they absorb endless amounts of water?  Would be lovely if so.

No, but you should be able to run water off the edge of the map.

Side note, Aquifers WILL absorb endless amounts of water.  All that running water will make your CPU unhappy, though.

Actually from how DF fluid mechanics work, it should work fine. Areas of a body of water or river treat their map edge tiles like an aquifer - if you drain from it, it will refill; if you pour into it, it'll displace the water off-map just like regular map-edges do. You can treat underground water like an aquifer made of water instead of soil/rock.
