As already mentioned on  this thread, it seems that dwarves ought to be able to put unidentifiable animals chunks to good use as food items, with a little extra work.

Would it be a possible to add some kind of meat processing shop where you can create sausage/haggis, etc. from chunks, fat and perhaps a little meat?  This might make quarry leaves (which occupy their own spice barrel) a bit more useful...
