just below, (Yellow cross is just one level down, has not moved), space to build the up stairs or the up/down one.

If i am looking at that right then your trying to (d)esignate a up or up/down stair on an already dugout tile...you cant do this as there is nothing to dig up with
you will have to dig down and then b-C-u
the b menu as you may know is for building
C is for constructions
u is the up stair

Yes. You're trying to dig a stairwell in space that's already been dug out.

I think you need to switch the init to maydayMIX if you want it black. Might be MAX, tho, I can't quite remember. Pretty sure it's MIX.

When designating stairs they are "Carved" out of rock already existing in the tile you designate.  To build an up stair without a natural wall you must create a construction which is found near the bottom of the build menu if I remember right.
