Blocks, every time, especially with the 'all stone is economic' mod, it just feels more, correct. Tend to try and stick to things having supports and thicker walls for defences too, I like a bit of dorfy realism.

 I find it's a stylistic choice, really.  When I see "rough stone block wall", I tend to envision something like this.

 Which is an interesting look in itself, and still pretty stable overall (though obviously not as stable as a properly carved smooth stone wall).

 As for "rough stone block floor", this is what I tend to picture.
