No, unless you have a mod that adds a "zombie" creature into the game. You can play as anything in the creature raws, but nothing out of it unless modded into the creature raws.

Zombies are special forms (comparable to castes I guess but hardcoded) of regular animals.
Unless you specifically modified a zombie in, you can't do that.
