I like this idea, but I should think we'd want some kind of ability to build pipes (eg, not water channels, real pipes) so that we could have full plumbing systems. Running water powered by water pressure, so that Sinks could be fitted with faucets and tubs similar. If you ran that water through a "hot zone" it would heat up and potentially give dishwashing dwarves happy thoughts.

Also, Steam Saunas? Dorfs having awkward moments / unhappy thoughts in the Sauna with that one fat dwarf who went in sans towel?

Further still, steam traps? Very hot steam (not like the mostly-hot steam in the saunas) could be used to burn enemies, or as a smoke-screen to make enemies loose LoS on dwarves in the field, given them time to get back to the fort before the siege sets in...
