A more effective solution would be the Dwarven Fish Trap.

A patch of water similar to that, but the bridge covers not the riverbed but a HUGE multi Z-level drop. Pumps at the inlets would prevent it flooding, but the fish would be dropped solidly. Build some repeating spikes down there, and you're in business.
