The DF Wiki has a list of stones and colored icons for each here:
http://dwarffortresswiki.net/index.php/Stone

That should be most of the colors. (metals might have more)

Unfortunately the default colour scheme doesn't include an orange. Only these colours. Otherwise I'd make my Orcs orange rather than brown.

Hmm. Maybe make a layer of alternating yellow and red.

Or use magma. Molten rock is orange, right?

Elves do it in trees. Humans do it in wooden structures. Dwarves? Dwarves do it underground. With magma.

Petrified wood (or is it cinnabar?) appears orange-red, at least it did ingame and in Visual Fortress when I was using it to see something that I was doing with ramps better.

Edit: It might have been realgar.

@Skorpion: The wiki says magma is a bright red.

Using the default scheme, cinnabar, petrified wood, and realgar are all fairly bright red, almost orange. Aside from that, you can probably mod the color scheme.
