You'll find everything there is under "Cave-In"... if things are connected to solid ground, they stay up. And if they are not connected to solid ground (like a boat would), they fall down.
The only way to have something boat-like would be with a narrow connection to land or a pillar to the bottom of your lake/ocean. Note that floors, walls and supports do hold constructions up while bridges, grates and most other stuff don't. Or you could turn off cave-ins in the init if you don't consider that cheating.

You could fake it with a sculpted anchor and chain to support the actual fortress.   :)

That'd be AWESOME. Then, you'd have to make the whole fortress on a boat. Wait. What about migrants/traders/sieges/ambushes? Don't you want to make all those ballista/catapults to work? I think that a boarding party would be awesome.

You do not understand the ways of Toady One. He is not a business, he's just a guy trying to make a fun game. He's invited people to come along and experience the journey with him (and help him test it out as he goes along). At the end of the day, I don't think his main goal is to sell Dwarf Fortress, its just to create the best game possible.

Don't forget that you can (h)ide built pillars, or that a floored tile filled with water usually looks the same as an open tile filled with water.  Between those you can do a pretty good job of making something appear to float.
