It has been my experience that if you arrange for a dwarf to spend a significant amount of time exposed to mist from falling water, he will live off plump helmet and water and still be ecstatic.  Literal brainwashing, I suppose.

I find awesome bedrooms work well too.  Get a legendary gem setter, mason, and engraver to give them little rooms that are engraved and have a green glass encrusted cabinet and coffer.  They will always be ecstatic from sleeping in a bedroom like a personal palace even though they are stuck in a 1x4 room.

Of course, then you have to deal with your baron throwing tantrums because he was "utterly traumatized by a lesser's pretentious sleeping arrangements lately"...

early on it is generaly better to use a dinning room because everyone useses it instead of just one person/couple. this allows for you to hold off the time expense of actually making them rooms indefenitly.

Do they keep being unhappy even when theirs is even better?

If not, a 2x4 with the same furniture ought to give their a better value.

All you need to do is arrange an unfortunate accident for them. I favour the lever-surrounded-by-spikes-in-the-corner accident.
