I was just watching some of the engravings in my fort..
One had an image of a dwarf, 'Shieldforge' (I named him that at embark), raising a shield.

I have yet to make my first shield in the fortress.
The dwarf depicted, Shieldforge, does like shields though, in his preferences screen, and is a legendary armorer. He will make shields in the future.
So it seems, engravings can even depict dwarves raising something they like, even when that hasn't been created in the fortress yet.
That, or my engraver is a psychic.
