Maybe your chefs should be able to slaughter and cook things like goblins, which could make the region a little more savage or something.

Agreed. In one of my first games, I can't describe how frustrating it was to watch my dwarves starve while they were up to their elbows in snakemen corpses...

The slave idea would work particularly well for hauling, especially since later on in the game hauling pays so little that you can't really afford to have dedicated haulers.

To go with the arena: It'd be nice if you could set dwarves to the "Gladiator" job.

And craft decorated leather masks, and order them to go shirtless.

And then make money off the tourists coming to see your luchadore dwarves!

I think we need to get healers working before we start having dwarf cage matches, but since there is already unconsciousness and pain from wrestling you could probably adjudicate matches that weren't lethal (but probably involved enough injuries to need said healers).  Entertainment value to spectators based on wrestling skill of combatants.
