Well, there's the Tetrahedrite -> Billon exploit.  That's an inarguable money-maker, but if you're going with personal challenges like this than that sort of "cheat" may defeat the purpose.

You could go with a complete non-metal-bashing ban - that would be even tougher.  Only armor is leather or what you can trade for - that would add a Leather Worker to the mix, for quality leather armor.  (It would also mean that you'd need more military, as sparring accidents and combat losses would both be high.)  Bowyer and Bone crafter for the x-bows, stonecrafter (or two) for the obsidian shortswords (best non-metal weapon you could make, by far.)

If you're going with cooks, hunters, plant gatherers and/or brewers, then my original understanding was off - if you're going in that direction, a proficient Grower is the #1 priority. 

(I'd also recommend at least one application of the "free crossbow, metal bolts and leather armor" use of Ambusher, which means they'd have to be either your leader (admin skills don't interfere w/ the free equipment) or a pure military type.)
