Is there any way to rip limbs off through wrestling in vanilla DF? And if not, can I/how do I mod it to do that?

No, but I think toady will put it in as a thing when your character is ledgendary.
And knowing is half the battle!

Well kinda yeah.

If you mod everything to have severonbreaks the option to break a limb will sever it.

I have considered doing that. Only problem is that combat would be over very, very quickly. Does damblock make it harder to break limbs?

No, At least I think not. I'm pretty sure that wrestling is effected only by skill, strength and size as a modifier. Damblock is for weapon damage calculation.

Let me clarify. If I gave everyone more damblock, would it be harder for weapons to break (and subsequently sever) their limbs?

Isn't dam block their natural ability to soak up the damage of an attack?  If this is the case, it may reduce the chance of getting criticals.

I thought the whole point of criticals was that they ignored armor/damblock, allowing them to damage critical parts, which is why everyone recommends spear/marksdwarves against Dragons.

No, I think criticals ignore layers, letting you hit organs with ease.  They also stick in.  Sticking in is bad, very bad against demons and undead, as it leads to twisting which makes things bleed and causes pain... two things only a few specific types of those have.  But generally something pierced is something broken, which works okay against something that severs on break, making piercing basically work like gore damage, without the fact that you are still hitting them with the weapon.

Well, I had a skilled wrestler rip the wing off a giant eagle in unmodded DF once.  Since everybody talked about giant eagles, I figured the same wrestler would be able to tackle the giant bat.  It didn't end well.
