Essential Mods, Where To Get Them and How To Apply Them?

I've been playing vanilla DF for a while, and I'm very interested in some of the more detailed mods out there. But, I do have to say, it confuses the hell out of me.

So, which mods are seen as pretty much necessary in improving the game? The only ones I've seen/heard tell of which tickle my fancy are orcs and taming/training more interesting creatures.
Also, as implied by the title, how do I put the mods in the game? Do I have to restart a new world to use them? And if I'm using a custom tileset (I am, the Mayday one from the Complete and Utter Newby Tutorials), will the mods work with it?

Mike Maydays graphics modpack (along with the stone management mod and the cat mouth fix) is a good one if you're looking for a new graphics look.

I'd recommend the civilisation forge mod, had lots of fun with it, especially in combination with the orcs (With trapavoid removed :))

EDIT: most mods have a readme or post the instruction in the first page of the mod.
This explains how to install the specific mod.
Mostly this will be overwriting some files in the RAW folder of DF.

Here's an essential mod.  Just paste the following to the bottom of the elve's raw (or any other creature you hate (cats))in the creature_standard.txt.

Molten Rocks lets you manage magma without bauxite. It sets realistic melting points for several rocks; stuff I'm sure Toady meant to do but never got around to doing.

I too recommend Mike's Mayday for a face lift.

I'm using a variety of mods, along with RantingRodents graphical tileset. If you want, I can PM you.

It includes the catmouth and economic stone fixes, which I strongly recommend you have even if you don't want the other stuff. They stop the "Cat cancels pick up: Too injured" messages and allow you to set any stone as economic. There's instructions on how to do the catmouth fix on the Wiki, and I can send you the stones or the catmouth (or both) as an independent file if you wish.
 
Installations varies by mod. Some come complete (i.e. they already have the exe as well as all files, modded and unmodded), others must be applied over a vanilla install of DF, and I'd expect others have their own exe's for installation.

That does raise another question, what is the purpose/use of designation of economic stones?

And do the mods like Civ. Forge and Orcs require more skill in playing? I'm still fairly bad at this...

Normally, an economic stone is a stone that can be used for some special purpose...like various ores (turned into metal), obsidian (turned into stone), etc.  Stones that you don't have a whole layer (ie TONS of), which have another use, are automatically reserved for non-mason crafts.  This means you won't say "Alright!  Finally, some iron ore to make some decent swords!  Now let me just go and--oh wait, my mason claimed it all to make some statues.  FFFFUUUU-"

Some people like being able to set ANY stone type as economic, so they can micromanage their stone more than is strictly necessary.  Very useful if you want to make microcline doors in specific, say.

Normally (i.e. in vanilla DF), "economic stone" has specific uses - flux, ores or obsidian only.  Most players wouldn't want their novice masons grabbing the gold ore and using it to make a few low-quality doors, or turning their only flux or bituminous coal into trade mugs.

I found the game more pleasurable with the mods, but the Orcs mod might be overkill for you (especially if you do not remove the [trapavoid] tag).

It requires a military effort almost from word one, and/or a very cautious outdoor policy.  But players bored with gobbos will find it... (say it with me...) fun!
