Keep chopping. Eventually an elven diplomat should appear and ask you to limit the chopping. Tell him that you won't.

Alternatively, if your goal is to anger the elves, consider killing the elven caravan.

Shopping down trees? The hell's that?

Anyways, to piss off the elves, you'll need to grow your fort enough to get an elven diplomat. He'll come the spring after your baron arrives. Supposedly, agreeing to the cutting limit, but then breaking it angers the elves more than simply refusing it at the outset. Even still, though, that might not work.

A sure fire way is to kill that diplomat. Then the elves will attack you. I've never done it myself, so I don't know if they stop coming or not.

(Also, if you have a lot of questions in a short amount of time, it would be nice if you could ask them in one central thread to avoid cluttering the forum. We'll come around regardless.)

They can tell you've been shopping down trees because of some of the leaves, and from seeing quite a few trees in their time.

(sorry)

First as others have mentioned, you need to be big enough that the elves send a diplomat.  If you just wanted to piss off the elves easily, you could just kill the diplomat; I'm pretty sure I've been sieged for that.  In my experience, they'll siege once, and sue for peace the next year.

If you want them pissed at you specifically for chopping down trees, I believe that you have to accept the restriction, cut down the trees and then leave them in stockpiles.  If you look at the (c)iv list after you've been given the restriction, arrow down to the Elves, hit return to select them, and then hit tab a couple of times, you'll see the Lumber Limits and how you're doing on them.  If you're over the limit, it'll be red.  This suggests you could even get them angry at you for not cutting any trees yourself, but just purchasing enough logs from incoming caravans.

My diplomat came the first spring after I got my baron. I didn't get the baron until my 13th year or so.

The baron MIGHT be at least one requirement for getting the elven diplomat.

regardless, the slime shooter will be completed, come hell or high water, which are both entirely plausible setbacks at this point.

Yeah, from what I have heard, logs in stockpiles are the sole determinant of breaking the treaty.
Which means you can buy out an elven caravan's kosher wood, not use enough of it by the next year, and despite it being elf-harvested happy tree wood, they will flip out about the trees you "cut down".

So yeah, stockpile wood after getting a barony [or even before for fun].

I disagree.  It is based on (a) not agreeing to a tree-cutting limit or (b) exceeding that limit.  You can see the limit (if you agreed to one) by pressing c for the civilization screen, Enter to choose the Elves, and Tab twice to view treaties and agreements.

I think but do not know that if you don't agree to a limit, the elves use the same limit that they offered you, but you can't tell when you've exceeded it.
