I was just trading with the dwarven caravan, which contained several things that I absolutely needed for my fortress. However, they didn't like my trade agreement, so I kept modifying it... but eventually, they were like, "Maybe next time I come you'll take me seriously."

God damn it! My fortress is doomed!

I don't think you can seize items from the dwarven caravan, but that's what magma is for. I find the best way to avoid annoying the traders is to give them at least a 20% profit margin, and go up to 30% or even 40% if they don't like the deal. The traders will usually only have the patience to refuse the deal 2 or 3 times.

what you CAN do to sieze items is to 'D'ump it from the Stocks screen.  Your dwarves will go and strip the item from the traders and bring it to your garbage pile.  When they deposit it,  just unforbid it.

The traders and the liaison are not directly related.  You should have been able to trade regardless of the status of the trade agreement - I've resolved that weeks after the traders have left, and vice versa.

As long as your trader has at least Novice-level Judge of Intent, they'll be able to tell how the trader is feeling. When they get to "rapidly losing patience", you're about to lose them.

If you bring more goods than you need to buy the stuff you want, they may propose an alternative trade that includes more items from your side. This will probably favor them more than it technically has to, but it's a trade they're guaranteed to accept.
