On the lowest Z level, dig a tunnel all the way to the edge of the map. Smooth that last tiles of the tunnel. Carve those smoothed stone walls into fortifications.

Easiest way to get water off the edge of the map.

Wow, I also had no idea you could carve fortifications on the edge of the map.
Now to go teach those pesky orcs a lesson.
