For actual output, it would actually be awesome if Dwarf can procedurally generate music.  I wonder if Toady have experience in procedurally generated sound.

EDIT:
Just read up some stuff.  It may be possible to train different Markov chain for different scenarios.  And generate a music out of that.

If/when we get paper and writing, it might be good to have 'composers' produce actual written music, which would be like a recipe for songs.  You could play instruments without them, but a well-composed tune would be even better, and perhaps dwarves could come to like 'favorite' songs.  Songs could eventually become famous and important enough to get their own legends entry, and would have history regarding who they were written by and so on.  Like engravings, a song might be written to commemorate a specific event as well, or just about things a dwarf likes.

Naturally, many songs would require specific instruments, which would help add flavor differences between instrument types.  There would also be different instruments that could be made out of different materials -- drums would require leather and wood or metal, lutes would require wood and thread, and so on.

Dwarves would like to hear music from instruments they like, music about things they like, and so on.

There were actually professional musicians who played in public conservatories in Ancient Greece. To have a room that could be designated that would be cool, it'd be like a statue garden except more awesome.

Also, opera:) That's going to be my goal now, to build a theater with trapdoors on the stage with the Phantom underneath it.

From my understanding, the music that's currently in the game was both written and composed by Toady, himself, so atleast we know that he's musically inclined.

Certain (Insane) dwarves should play music during certain events like the Roman Emperor who played his harp while the city burned around him. I can see it now... Also, songs could be passed down from generation to generation, and changed accordingly. For example, if a dwarf made a masterwork piece of music, others would likely try to recreate it with their own personal additions so it better suites their interests, and another dwarf would pick it up from there or it would be passed on to the first born child or something.

It'd be nice if bardic dwarves could use an office to write music in, as well.  Especially if the songs are something that happens in the instance of a mood.

And even more awesome if the music has a random chance of being played in a music hall/stage area in your fortress.  The bard that wrote it could get a happy thought whenever he hears his song played.

I like the sound of all this. Especially as a musician. Although it's worth bearing in mind that any electric instruments are out of the question, which also eliminates most kind of rock music. Of course, music, made with actual metal would be great. Dwarven gamelan?

A good range of instruments would be useful. We've got drums, flutes, harps and piccolos, but dwarves really need some brass.

well we already have hollow tubes, and we can make them from metal or wood, we have a loom to make strings, and a carpentry shop for the frame, so that's a xylophone right there. We really don't need anything new to make one, just the recipe. :)

That's true, but how about artifacts and other constructed items that feature products that have been naturally formed? Not just stalactites/stalagmites, but also things like bamboo, shark teeth, tusks from boars, turtle shells, etc, that might easily be added to musical instruments whole?

They wouldn't really count as "material A", in the sense that it would be that specific item, not a generic "bone or stone" that would be required.
