i stopped using plump helmets because dwarfs get a lot of happiness if they always eat cooked food and by cooking flour, sugar and alcohol you ensure that they never eat raw food;

Perennial crops would be nice, they could have to be created in similar way to building, by the player setting them down one at a time. you could also have to grow them from seedling in some sort of building.

Perennials like fruit trees(mushrooms?)  would be time consuming to create and have low yield but if put in  a natural flood area would require no maintenance afterwards except harvesting the fruit

how about combining the above posted suggestion of outdoor farming making indoor farming harder
they could have some of the following advantages and disadvantages:

-outdoor farms have higher yield, (sunlight has more energy than the nutrients in mud)
-outdoor farms require little setup
-outdoor soil losses nutrients so either requires fertilizer or the farm plots moved every few years, if you move them distance from the fort can quickly become a problem
-indoor farms need a large amount of space to be dug out to feed your fort
-outdoor farms are a good way to feed your dwarfs in the first year
-dwarfs like indoor food better
-if you have outdoor farms then during sieges shutting your doors till they go away is no longer a valid option
-siegers may intentionally destroy outdoor farms or try to wait you out if they see a lot of them (while enjoying your food!)
