But dwarves CAN eat vermin...

True, but I think they're only a last resort, if the dorf in question is otherwise starving.  They can't be cooked, and I don't believe they're on any dwarfs "favorites" list (tho' I'm not sure - hard to prove a negative like that.  Has anyone seen otherwise, and the dorf actually seeking and eating that vermin?)
For some odd reason dwarves tend to hunt down vermin in cages and eat them, even though there's tons of other food available.
That's why I don't buy from the elves, or catch things in animal traps.

Tame vermin won't be eaten.  "Tame small animal" at a kennels.  And the elves sell you already-tamed vermin.

For vermin that can't be tamed, such as fireflies, you can {forbid} the vermin once it's in its destination cage.

Tamed vermin, if adopted by a dwarf, go into their inventory. Since they shouldn't, as far as I know, adopt another pet...well, brings down the chance of a dorf contracting cuddly wuddly syndrome from a stray kitten. Why that kitten isn't on its way to the butcher shop is, however, unfathomable.
