A total of 12 traps. Whatever I want, just 12 traps. No more. No atom smashing enemies, either, I just smash their clothes. I sometimes savescum to 'play' with captured megabeasts, though.

Only Stone Fall traps or Cage traps.
Limited Marksdwarves.
If ambushed or sieged, I have a preference for counterattacking rather than turtling in my fortress.

My current fort.

1: Five units of four melee dwarves. Most are champions.  9 times out of 10 I wait until the gobbos are just outside the gates and then send my troops out. This way they're supported by...

2: Guard towers with 2 to 4 marksdwarves each. There is one tower at each of the 3 entrances to the fort. There are two towers in the inner courtyard. I rarely use my...

3: Traps. At each gate is a 3 deep wall of traps: cage traps, weapon traps, stonefall traps. I only use these if I see a ton of marksgoblins coming.

4: Cleanup. Everything gets dumped except for weapons, ammo and items with nifty images on them.

Captured thieves, wrestlers and lashers are executed by my military with a cage/lever setup. Armed gobbos...well, depends on what I feel like. Marksgoblins are drowned (or will be as soon as I get my drowning chamber going.) Important goblins, such as elite or master soldiers and local leaders, are allowed to roam free in the maximum security facility. (or will be as soon as that's finished.)

I think stonefall traps are a lot more "fair" for dealing with sieges than other types of traps. In this, of course, I include little white ^ traps and gigantic trick ceiling falling down and splattering an entire horde traps. The former is useless against hordes unless you make an obscene number, I suppose, and the latter takes enough time and energy to set up to balance things out quite nicely.

The limit is one layer of cage trap, weapon traps should only be used in execution chambers.  Lots of Wardogs in locked cages and released instantaniously is fair game.

As long as there is a chance it will cock up, it's fair.

No traps. Except:
* Raising draw bridges to send attackers plummeting
* Opening flood gates / turning on pumps to release lava

and I generally try to limit myself in terms of archers.. say 4.

Here is an interesting one I found on DFMA.

1 layer of traps.  Those traps never have more than 1 weapon inside Usually a serrated disc for gib factor.  Cage traps if used are placed at non-strategic locations, I don't use them for defence, just to catch wildlife.

Custom Orcs.

Goblins and orcs at higher fort sizes ride flying, poison stinging wyverns into battle.

Always at least one passage into the fortress.  Usually more.

No defensive atom smashers.  Invader clothing is smashed by a garbage disposal smasher if no chasm is availible.  All metal invader gear must be melted to "purify" the metal before used.  Invader junk will not be sold for any reason.

Military casualties must be buried in a 3x3 tomb.  For every notable kill the soldier achived before death the tomb is extended by 1 tile.  That tile is paved with precious metal if possible.  Champion tombs get the walls engraved.  Tomb gets flooded with magma after the soldier's death if possible.

Personally I go maces, but yeah. This isn't much of a limitation though unless you restrict your combat and armorsmithing skills to crap; a champion in full exceptional/masterwork plate + shield is basically invulnerable to melee goblins and almost invulnerable against archers.
