Bombs away!:
Roof over the sky, build a grid of holes with magma-proof hatches connected to levers into the roof, then pump magma up there. Whenever you are invaded (Or the Elf Caravan arrives) Pull the levers and try to drop columns of magma onto your victims. The trick is to predict where they will be when the magma reaches the ground!
Modification to this:
Orbital Bombardment
 Roof over the sky. Construct a system on the underside of the roof that will collapse a construction anywhere on the map you desire.

I was actually working on that at the moment... heres an idea I had....

City States

Embark on the largest amount of space physically possible, and set pop cap as high as possible as well. Your first 7 build a fully functional fortress in the rough map center. The next immigrant wave builds another, totally seperate fortress. And so on. Also, these fortresses may never come into contact with one another. Bonus points if you never move a dwarf from a "city state" to another. For extra challenge, try making floating or underwater city-states.

That would be awesome, but it would destroy the FPS.

Challenge for this one and Pie's:

Only the founders are allowed to make food, and must make enough for all dwarves, dropping the food down to each level through a pit.

Only the 2nd level can cut trees and fashion wood items, and must provide for the founders and all levels below as well as providing defense for the fortresses.

Each wave of immigrants gets a unique skill area and must provide for all fortress levels, exchanging goods only by dropping them in a pit. Glass, metal, textiles, leather, etc.
