Help me with a megaproject: Kingdom

Hey, so I'm trying out my first megaproject of making a kingdom with a castle, mote, walls, home quarter, industry quarter, the works (using humans of course).  So I got my first z-level of wall built that made my fort into a 50by130 plot with a well in the dead center, guard towers at each corner, a 3 tile wide space for my drawbridge in the center of the northern wall, and a 10by20 underground greenhouse being "floored over" as we speak.  I'm in warm weather with a brook, lots of trees, and chalk.

I was thinking of making lots of little square houses for my humans in its own quarter, and having a big castle in the south-center area.  My walls will be two z-levels high (as far as my mote is) with 3-4 z-level high guard towers at each corner.  I want to know any tips for using my space efficiently, I was thinking of using some kind of grid system but I wanted to ask you guys for tips.

You should build paved streets first, and then haphazardly fill in the buildings.

How far should the paved streets go? just a basic + shape or pave out every little street?

Dirt road the side streets.  Redo them every other season, so every other season you have no side roads.
