I just installed 40d8 (Mac), although the save I'm using was started under 40d7 (XP).

I assigned two peasants to the military (the first of any in the fortress). They went to the barracks and started sparring, and as I watched, they leveled to novice wrestler, and then full-out Wrestler, in the space of 20 seconds.

This isn't a case of "wrestling increases faster than assigned weapon skill," they're assigned wrestling, but they're leveling up blindingly fast. They'll probably be legendary champions in 10 minutes. Anyway, that can't possibly be right.

Update: they were recruited in Early Spring, by Mid-Spring they were both Professional Wrestlers. They probably would have made legendary by the end of the year, if not earlier. Unfortunately further testing of the bug will be delayed; I switched them over to swords and one of them stabbed the other in the throat.

OK last update: The dwarf who survived made legendary wrestling champion in EARLY SUMMER. The other dwarf I assigned to spar him to replace the dead one is already at Accomplished.

The champion leveled wrestling up so fast that he's only Dabbling Armor User and (regular) Shield User.

I guess I'm not really complaining though - champion wrestlers in only one season?

I had the same thing happen, but it was with several dwarves wrestling with a zombie giant eagle.

Yeah, it happens in particular when they're trying to strangle undead to death -- they just keep strangling and the thing never dies.  But wrestling skill seems to be gained too rapidly in 40dX in general, even from sparring.

just accidentally had 3 immigrants turn into elite wrestlers while I was designating a tower to be carved from the living rock!
this is just so plain annoying, I considder it a bug.

It's a known bug and reported several times.  It's a chore to have my macedwarves actually macedwarves and not wrestlers because of this.  Most of them have finally changed their colors and come around due to sparring with the mace, thankfully.

I found it odd when i recruited a hunter to prevent him from running off to hunt while zombie elks were roaming around, turns out hunters won't hunt undead animals but the odd part was that instead of becoming a marksdwarf like they did in previous version, he became a wrestler.

He did eventually pick up the crossbow again and train with it after i installed the archery target and set him to "off duty", this also only happened to the first hunter that came in a migrant group, other hunters became marksdwarves, i'm using straight .40d as well

never paid much attention to undead animals... I know skeleton X are made of bones, so are zombies made of rotten chunks ond bones?

I tried how wrestling exp is gained in adv. mode and noticed that:
A) Every time I even grab something I gain X xp.
B) When I hit something with a hammer, for the first time, I usually gain X xp. X is only gained ONCE (per enemy).
X is dependent on the thing I hit/wrestle.

An example: Gained exp from hitting two harpies with a hammer = 275-253 =22 xp. When I killed a third harpy in the same encounter I didn't gain any xp at all. Next I killed 6 beak dogs with hammer and gained 351-275=76 xp total.
Then I went to westle a Nightwing until I bored and hit it with my hammer and gained wrestling xp from Great Wrestler (707/1600) to Legendary wrestler (821/2600). That's 20428 xp... Hitting the night wing, to kill the damn thing off, gave me no xp in hammerdwarf.

So 3 harpies and 6 beakdogs with hammer = 76+22= 98 xp while wrestling one nightwing is 20428+ xp (consider I hit the damn thing after he refused to die by random grabbing)
