Is there a way for me to allow ropes to be made of leather, and let my leatherworkers make it? I've explored a lot of the object files but haven't found anything about rope/chain.

You MIGHT be able to make a leather rope via a smelter reaction, however I doubt it would work and it also wouldn't transfer the material properties correctly. Ropes are one of the items (like beds and barrels) that are still hardcoded -- bizarre hacks aside, you need cloth for a rope, or metal for a chain.
