stupid question

This is embarrassing, but I cannot for the life of me remember how to designate animals for slaughtering.  I'm being overrun with horses and my dwarves need MEAT.

The wiki doesn't seem to list the necessary command, and I haven't played in a really long time.   

Hopefully someone can help me before the damn foals get adopted.   >:(

The only animal that gets adopted without you allowing it is the cat.
(z)(Animals)-On-screen prompts (I forget the specific letter)
