Mandate Engravings?

So, is there any way to ensure my dwarves carve the correct sort of thing?

That is, I know they'll carve goblins being killed after a major battle and such, but when going for a particular theme, can I do anything?

Nobles can mandate engravings?  Oh man, I'm scared now . . .

I know that they have to hit a certain level before they make engravings of history.

Seems a good idea to me a noble that demands 3/3 (minimum level of quality) engravings. Just not in his room, because there wouldn't be enough space.
That way you'll just have to treasure that legendary engraver that otherwise only is there for raising room quality

The answer is "yes, within certain limits".

If a dwarf engraves something and you don't like it, order a wall built over the top of it.  Then remove the wall, smooth the resulting tile and re-engrave it.  Do this until you get something you like.

Be prepared for your legendary engravers becoming upset when you ruin their masterpieces, though.
