How the hell do I wield them? After losing my steel spear somewhere along the wolf ambush line, and didn't realize it until midway into a fight with a titan. I promptly ran away, went to a humie town, and stole an iron spear for megabeast killing, and got a copper hammer for normal fighting. I successfully stole them and ran away, and the only items I'm holding in my hands actually is my steel shield. So, what gives?

You'll want to 'remove' them from your backpack, and check to ensure all you've got in your hands is your shield...  Your best bet is to drop the shield, 'r'emove the weapon you want to use, then pick your shield back up.  If your hands are empty, the weapon will be put into your weapon hand, and then the shield will be put into the secondary.

This may sound silly, but make sure you still have both hands.
