Having actually played Educational games (From Super Solvers to The Magic School Bus)... I don't think Dwarf Fortress really has too much educational value.

Or at least it isn't presented in a method in which one would derive any sort of knowledge in a way that would be better then looking it up in a book.

I mean, just look at the many ways real life and dwarf fortress differs when it comes to Geology such as Magical Sinkholes and Double Infinate Springs

That may be true, but being in a geology class myself, I tell you I would have never learned the names of the important rocks (especially igneous rocks) without DF.  Though geology may be a bit convoluted in DF, it still allows you to answer basic questions, such as this (taken from an actual test).

Which of these is NOT a sedimentary environment:
a. River Delta
b. Ocean Floor
c. Floodplains
d. Volcanoes

As we all know from DF, it's almost impossible to find a sedimentary layer in the same biome as a volcano.  I can honestly say that DF helped me get the third best grade in the class on one of my tests.  It also introduced me to my favorite rock in the world, obsidian (pumice comes at a close second).
