Gravity

Currently gravity does not effect a town whenever no human controlled thing is there. This means it is possible to do some weird stuff, like build over water. Upon appearing into the area, the buildings on the water will then immediately collapse into the water. This allows some pretty interesting stuff, where if you start a fortress on an area and then allow a building to collapse, but abandon during the period while it is paused with the "A section of the cavern has collapsed" message. If the game is set to start paused, then when you reclaim the dust from the falling building will be gone, but any furniture in the building will remain floating until you unpause the game.

It would be brutally difficult and probably won't work. In other words, it's absolutely dwarven!

I don't understand the first part.  Who is building what on the water if there's no player-control at that point?  Was that about the site map gen?

I'm pretty sure this has been reported before - mod humans to settle ocean biomes, gen a world, then visit a seaside town. There will be human buildings suspended over the water, and they'll collapse instantly when you enter the area with an adventurer or dwarven settlers.

At least I've so far only heard it happen with mods, if it happens in normal play as well I guess it's a bit more serious.
