Coracles sound like an excellent idea, they could be carried and placed in stockpiles like furniture and should require no docks, they are just placed in the water adjacent to the shore and then boarded.

In favour of canoes over coracles, have you ever had to carry a canoe? It's not all that difficult. Not harder than carrying, say, a +maple bed+. And if elephants fit on one tile, canoes can as well.

Having a method to fairly reliably train your dwarves to swim seems like a nice solution to me. I'm hoping to fill those underground lakes with bridges and walkways but dread dwarves falling in :P.
That's not the problem.  Even if you train your dwarves to swim, currently my understanding is that they still won't realize they can swim -- they will path around water, rather than swim through it.
