Stoned giants acting funny

I've recently started adventuring again. I made a young world with lots of volcanism, savagery and visible caves, which is chock full of caves, which are in turn chock full of giants, who have to resort to living with giant roommates.
Anyway, I've independently discovered the strategy of luring giants, disappearing behind a tree, coming back to the giant and pelting him or her with rocks picked off the ground an he stands perfectly still. It's all very easy, if a little repetitive, but there's one major problem- When the accumulating limb and organ damage starts taking its toll, the giant darts away with speeds unmatched by an unharmed giant, and I can't catch up. I can only walk helpless as I read about him lapsing in and out of consciousness.
How can I keep giants from running away while I stone them to death?

I decided to stop being so cheesy and genuinely get my guy strong. He quickly got to the point where he can kill a giant without a single wound, and went into a cave.
The cave had not one, not two, not three, but four giants, all of them killed in less than two minutes.
This guy is going to be a legend some day.

Well, shucks. I got into just one more cave before retiring in a town, and a cave spider of the giant variety kicks the crap out of me.

Don't feel too bad about your mighty hero dying, that was a terrible name. It'd probably be best to start over.

[EDIT] Meant to say:

It probably only looks like the giant is moving very quickly, but you're probably still in sneak mode and thus very speed deficient.

All that means is his speed rating is one hell of a lot more than yours, so to you it looks like he's moving multiple squares at a time, when in fact you are just moving partial squares per turn.
