It would be really slick if there was a command on the labor preferences menu that would designate the selected dwarf as the only worker to do a specific task. It would be nice if this was its own seperate setting that preserved but overrode other dwarves' labor preferences, but even if it just toggled everyone else's preference off it would still be a very nice shortcut.

That would be handy.  Also, I'd wish for a job queue attached to the dwarf also, that would override the shop job queues.  This would be one way to set the legendary carpenter guy to making great beds instead of fancy bins, or the legendary craftsdwarf to make crafts instead of aesthetically pleasing crossbow bolts
