[TWO_HANDED:7] I assume this means that creatures size 7 and below wield it with two hands...
[MINIMUM_SIZE:5] ...and this means that only creatures size 5 and bigger can wield it,...
[MATERIAL_SIZE:3] ...but what does that mean?

It's how much materials go into making it.  The number of adamantine it would take is that number, the number of bars is that number divided by 3.
