They control what kind of stuff you find in the demon pits. I guess Sphere: Fire Means you find some lava, for example. I also think they control the units naming conventions; I haven't tested this for sure, but while Moding I noted my civ units tended to have 'fiery'-esqe names with the Sphere: Fire tag.
