If one wanted to make an eye-less creature, would they simply have to leave out the EYE tag in the [BODY: string?

Yep, remove the (normal) 2EYES part. Of course, no eyes, and they can't see, obviously. I think I remember reading that EXTRAVISION allows them to see without eyes, though. Probably wrong on that one.
