dungeon master duties

Is there a way to alter the jobs enabled for the dungeon master?  I don't want him jumping in with no skill and using up my more valuable materials

I could just lock him in his room and starve him like the last one, but another will come in his place...

I dont think there is a way to change the labors. But you could either ban him from using your forges or use poor materials to build his skills.

Use the workshop preferences to limit access to only those with sufficient skill.

I generally let my dungeon master man a smelter. He seems happy enough.

You can set up little training smithies by restricting access to people below a certain skill limit.  Then do the opposite for your "real" metalsmith shops, and then just queue a couple repeat jobs using some cheap 'n' easy metal on your training smithies.
