As a semi-challenge and to explore some things I'm building a village; no digging, purely above-ground town surrounded by a large palisade wall. Speaking of the wall, I've left a large 3-tile-wide area for caravans open. If I leave that open as an obvious entrance, will climbing invaders still try to scale the walls? Or will they prioritize the opening?

in my experience they will prioritize the entrance. unless they are triggered for some odd reason, like if  they are passing your walls and spot a sentry, encouraging them to climb and attack.

 though, in that situation, the sentry is just as likely to throw themselves off the palisades.
