Gladiatorial arena.

So I've got a few captured hostiles and a dug out area for them to kill each other and/or kill/be killed by my military dwarves.

How exactly do I place their cages down and then link them to a lever to be remotely opened without removing them from their cages? Dwarves tend to just drag whatever's in the cage out of it and then get immediately attacked by the caged monster.

Build -> cage -> expand the materials list -> select the cage with the hostile in it.

One the cage is built, link it to a lever.

Usually they fall out of cage going to Trade Depot... if you Build the cage it should keep the creature inside.

The other alternative is mass pitting, although that periodically results in one pittee breaking free and, for some reason, all the following ones do as well, even if the first one has been killed before the haulers try to pit the next one.

Creatures stay in their cage if you use the build order. Expand the list so you can see if there is someone in it.

If you link build cages to a lever and pull it, the cage get deconstructed after it releases the creature.

The mechanism attached to the cage is deconstructed as well. The mechanism attached to the lever stays. Deconstruct the lever once in a while to get those mechanisms back too. Unless you need a high value room.

Another method would be using a minecart at high speed to shoot it through a fortification and slam the minecart into a wall a few tiles away. That would release the creature too. Much harder to set up, but more practical for large amounts of prisoners. It would still generate hauling jobs for the empty cages.

Locking doors or raising bridges is recommended anyway before using arena. Good luck and may the fights be bloody.
