i have set out an farm plot, i am out of both plump helmet seeds and pig tail seeds, some tiles in the farm are brown duble tilde (this symbol but twice in case i mixed up the names ~) and after a while a dworf came and made some of them into brown = before running out of seeds. Are my plump helmets going to grow and supply my fort with some home- grown dwarven booze, or am i in serious trouble here?

That would be correct. The double ~ symbol is just unplanted fields. the = symbol is a planted seed that the farmerdwarves have planted. At some point they'll turn into the plant symbol for that crop, and your dwarves will go harvest it (assuming that there is stockpile room for that plant somewhere).

By using t-show building contents, you can see what seeds are planted.
