How to haul?

Do i want to specialize people into hauling and have them doing purely furniture hauling, or item hauling, or burial and animal feed, ect.?

or do i want them all to have all hauling?

or do i want to have some have all hauling and 1-3 of each profession w/o hauling?

or a mix of the above?

There is no set way of doing things. It really depends on your playstyle and on the situation at hand. Here's what I usually do:

Having dedicated haulers for a particular type, e.g. refuse hauling, ensures that these hauling jobs will get done - eventually. But since there always seems to be "that one project" that requires more labor force than all the others, it - more often than not - slows down bigger projects. If that's fine for you, go with it. Personally, I switch hauling jobs as the need arises via therapist. Just eases the flow for me.

In terms of professions, I always have my dedicated farmers/crafters/masons/smiths etc. with all hauling labors turned OFF. They are to focus on their profession, no distractions.

In the end it comes down to playstyle. How much do you WANT to micromanage (I like to do it sometimes) vs. efficiency. Try different settings and chose the one that works best for you.

Often I enable all hauling tasks on all dwarves.
If a dwarf has a job that has high priority I remove the hauling jobs from him.

Dwarves do not mind hauling, but they want to do other things too. Assigning only hauling jobs will make them unhappy.

Assigning specific hauler jobs are only needed for some situations. Like assigning corpse hauling to stress resistant dwarves or disable any hauling except maybe stone for stress vulnerable dwarves.

Having all hauling jobs enabled is probably better. In that case the job algorithm will find the closest idle dwarf, instead of bypassing them to find the dwarves on the other side of the map that have that specific hauling enabled.

There is no particularly good reason to have permanent hauling restrictions. If some hauling isn't getting done for some reason, it's easier to temporarily disable, say, stone hauling, until the more important hauling gets done.

As mentioned, it largely comes down to play style. If you're trying to save stressed dorfs you should usually remove them from corpse and refuse hauling immediately, as that's a common cause of large amounts of stress. You may also consider keeping them from the horrible surface with its rain and sun, in which case you should remove wood hauling and other surface hauling (such as collecting the stuff dropped by visitors on the map edges when they realize they've passed their expiration date (i.e. death by old age), as well as battlefield cleanup even after the corpse bits have been removed. Also note that plant gathering of fruit using step ladders involves leaving piles of fruit on the ground for food haulers to collect.

Having hauling enabled on anyone causes hauling to be performed as efficiently as possible, but that comes at the cost of workshop activities not being performed at top speed (and I've repeatedly seen construction jobs trumping digging jobs for miners).
