This could be automated with pressure plates.
The 3x tiles wide corridor for caravan doesn't need to be much longer then the 2x tile for invaders.
Usually I am building serpentine dungeon with cages and dispose the contents with mass pit.
Will cages trap undead? Will undead cause bridge deconstruction?

I think the caravan members count as visitors, and those don't trigger any kinds of traps, including pressure plates. Cages trap undead just fine, as long as they weren't trap avoiders in life, I think. Similarly, undead rutherers will cause drawbridges to deconstruct (as will blind cave ogres), but "normal" undead work just fine to smash. Haven't tried the big blob experiments, though: they might be too large.
