this is really annoying for most first time players, and there is no reason why dwarves couldn't store water in barrels just like they do booze.

How would you get water to a barrel? Fill it with buckets I suppose. Should be a thing, but the mechanic exists (doesn't exist) from days bygone when the game was more of a game.
Learn the mechanics of building a well before your dorfs get injured. Fun!

With multi-racial fortresses and non-alcoholic citizens now a thing (and increasingly so in the future), yes it makes sense for water to be stored in barrels.

i think the dwarf should just grab an empty barrel and take it to a water zone marked with the 'I' key, fill it up, then return it to a stockpile.

Minus the murky pool part, Dwarves are very strong on average. Taking an entire barrel and filling it with water should be a cake walk for them.

Minus the murky pool part, Dwarves are very strong on average. Taking an entire barrel and filling it with water should be a cake walk for them.
It's more balance than strength. A barrel is about as big as a dwarf. Try it in a fast moving river and you'll realise how silly it is.
Anyway filling barrels from buckets was actually introduced a couple of updates ago (for lye as I recall). So the mechanic is already in place.
