Just posting this because I have never had a Law-Giver visit before. I am on my new fortress of less than 2 years. I'm really tempted to shank him and see what happens

You will expedite a succession process, and if very lucky, create a casus belli. I had once a king consort visiting. I have failed to protect him from the goblins.

As indicated, a Law Giver is a human noble, and titles trump professions of visitors, so this may be any kind of visitor, from scholar, performer, merc, monster slayer, quester (including demander and infiltrator), monk, ... to spy.
