I know it's a trap component in the game and also a part of a water pump, but I still don't know what exactly that was in real life.

Well, I think the image actually is of a version of an Archimedes' screw (I believe there are also somewhat modern versions where the pump is connected to a bicycle to have the pump being powered with the pedals rather than using the hands).
The DF screw pump is likely based on the real life screws, though, but adding an upper floor, an impassible tile, power transmission, etc. Quietust is correct (as usual) in that the DF screw pump is built from an enormous corkscrew, a pipe, and a (single) block.
