What satisfies this? They've plenty of alkyhall, so.. what do they want? A well, even tho they prefer the good stuff?

On a similar note I've seen dwarves becoming quite thirsty (after I ran out of booze) despite the fact that there was a nice clean brook nearby. There was also some muddy brook which was easier to access but further down it too became clean. Will dwarves no longer drink from rivers and such?

I think sometimes brooks are getting hit with the stagnant flag, so they'll only drink when they are halfway between thirsty and dehydrated.  It's odd if they ignore alcohol though.

They're definitely drinking the alcohol stocks (had to trade for damned elven wines), they just keep whining about being thirsty.

On a somewhat related note, I'd love to see injured dwarves be able to drink booze instead of water. Because as is it's very difficult to have any kind of a functioning fortress with no nearby river or brook.

Oh god Hypcso. You've just predicted the future death of my fortress if I don't find a water source better than my little lake and soon.

I've run some subterranean channels in / tapped aquifers and made them into drinking / party / fishing spots. Even then, it seems like dwarves would rather poke themselves in the eye than stoop to drinking water. I think this is to increase the likelihood of them finding some available alcohol and getting the DWARF FUEL BONUS, but I don't think I like it.

I went to start a fort the other day, and ended up with a lot of excess points (around 50 or 60). So I went back to that old Dwarf Fortress adage: "When in doubt... more booze!"

Of course it turned out that building your fort in the side of a mountain is kinda difficult since food is hard to make without water, and living on traded food is virtually impossible.

Hey Toady. Any plans for un-watered crops?

Also what do rock nuts do? Are they grind-and-cook foods?

rock nuts are the seeds for quarry bushes, which can process for leaves and cook those

Outdoor crops do not require water.

Nor do indoor crops, provided you have some loam or sand. Or on glaciers you can use the trick to make some loam.
