Robes vs Dress?

So, my dwarves cannot make robes... I'm wondering if dresses are the same as robes? Looking at the wiki, it seems Robes are favored, but everything seems to point to Dresses being equal, or better (due to less material cost and lower size). Ignoring how fabulous my army would look with dresses on, do they provide the same protection?

dresses on your military? you need real armor or else they will die pretty fast.
but yeah there is no functional difference between dresses and robes, and dwarves arnt currently bothered by crossdressing.

Robes and dresses belong to different clothing layers, so your dorfs can wear both at the same time http://dwarffortresswiki.org/index.php/DF2014:Armor (upper body table, layer column: robes are Over while Dress is Under), so the best replacement seems to be a Coat (followed by toga and vest).

My typical production is Dress, Robes, Cloak, Socks, Shoes, Mittens, Gloves, Trousers, Cap, Hood for civilians. Dorfs cannot produce underwear or face cover. This is for civilian usage: My militia wears only armor and a cloak, due to them not having the sense to replace worn clothing (I don't know if armor wear has gotten them to realize they really need to replace the XX¤pig tail sock¤XX, though).

I was going to be making adamantine robes to have over my adamantine breastplate and adamantine mail shirt. Will it layer right with my mail shirt and breastplate?

Yes, but Adamantine clothing will still degrade over time like any other material (including cloaks).  Great if you want to beef up as much as possible for a pre-planned fight, but otherwise will be junk in a few years.
