I don't have excess axes to test this. But if all dwarves are lumberjacks will they keep the axe and defend themselves if attacked? I don't like having my dwarves get bullied when hauling lumber from a cave or something.

Yes, but a better option is to put them into a militia squad that is equipped with only a weapon and a light weight shield and have that squad off duty with no place to train. You may optionally assign some light weight armor to them as well, but armor will slow them down if not trained in armor use. With a squad you can assign them training facilities from time to time and set them to active training for a while before setting them inactive and removing the facilities to both improve their weapon skill (and chance to actually defend themselves) and satisfy desires for martial arts training. Note that you need to remove the training facilities from the squad or the buggers will start doing "individual training" rather than work once they've built up some skill, so it requires micro management.

Thanks for the better suggestion, this sounds like a great idea.

From observation, with skill-enabled woodcutters, miners and hunters, they will use the weapon to defend themselves with blocks and parries but will not attack, except when they see another dwarf being attacked, then they will get vengeful and join the existing conflict with that weapon. Example1: a legendary miner blocked over twenty attacks from a creature without attacking back. Example2: a creature attacked a dwarf, some weaponless dwarfs joined the conflict but the woodcutter joined the fight using his axe. I don't know how dwarf tendencies like Violence and Anger effect this. That legendary miner might have been a peace-lover for all I know.

I usually have only one woodcutter and all the guys without a "civilian job uniform" are set up like PatrikLundell said, they are often nearby, hauling the wood.
