DF Hack-Priorities

Just starting to play around with "priorities".  Is there a way to "disable" or turn off this when it's not needed?

No. 4 is the default. The numbers never go away after you've used it once.

DFHack does have a tweak, "tweak hide-priority", that hides priorities temporarily. It's pretty simple, though - it just resets the "have priorities ever been used" flag, so if you do anything priority-related, the numbers will show up again.

i use the priorities quite often and in the LNP it always has them deactivated on startup.

Maybe your LNP is running that command, then. Search for hide-priority in stderr.log.

Also, it should default to being off in new forts, so maybe that's what you're seeing.
